Crockpot Scalloped Potatoes and Ham

I got out my Fix it and Forget it cookbook (I must admit to never having used it) to see about making some easy meals.


Cooking out of my pantry has been fun, but I wanted to find some different ways of making some of the staples I have in my pantry and freezer. We have a lot of our pig left, so I am always looking for fun ways to make pork.
Once I got into the cookbook, I found several weeks worth of simple down home meals. So hear is an easy one for you.

Miriam's Scalloped Potatoes with Ham
6 c. raw potatoes, cubed
1 med. onion, minced
1 tsp. salt
1/2 lb. cooked ham, cubed
4 T. butter
4 T. flour
1 t. salt
2 c. milk
1 1/2 c. shredded Cheddar cheese
(I used a Mexican blend that I like)
Layer potatoes, onion, 1 t. salt, and ham in slow cooker. Melt butter in a saucepan. Stir in flour and salt. Cook until bubbly. Gradually add milk. Cook until smooth and thickened. Add cheese and stir until melted. Pour over potato-ham mixture, stirring lightly. Cover and cook on low for 6-7 hours, or High for 3-4 hours.

Here is the butter and flour mixture. Mine is brown because I use 1/2 wheat flour and 1/2 white flour.


Here is what it looks like all ready to go! I didn't get an after picture, because dinner is a bit crazy around our house, and I just didn't think of it until it was all eaten. It was VERY good, and we agreed it was a keeper. (Hubby and I agree, the kids, of course didn't like it. What's new though! Grrrr)

Oh Maria..that sounds so good! I wish my hubs liked ham more.. what is wrong with him!

that looks awesome...but i don't eat ham! wonder why the kids didn't like? i am sure my family would love it!

Ahhh, warm winter food. This is the rib stickin' kind of comfort food to eat on a rainy cold winter day. Love the idea of putting it into the crock pot. I need to use mine more, thanks for the recipe.
