For this weeksThe Grocery Cart Challenge recipe exchange I am posting one of my favorite recipes of all time. I love to make this fresh salsa during the summer and eat it on days when I am not in the mood for anything hot. Since I am getting the itch for warm weather I thought I would share this one. I got this recipe from my friend Kerri a few years ago and have had many requests for this recipe since. Enjoy!
Salsa
10-15 Roma Tomatoes, very firm
1/2 bunch fresh cilantro (Leaves only)
1/2 t. minced garlic
2-4 Jalapeno Peppers, seeded (to taste)
2-3 T. salt (to taste, I start with 2 first)
1/2 white onion
3-4 limes
1/2 head of cabbage
1 lg. bag of tortilla chips
In a large food processor, chop tomatoes very fine and place in separate bowl. Chop (very fine) cilantro,garlic, peppers and onion. Place in bowl with tomatoes. Chop cabbage and add to tomato mixture, mix well. Add salt and mix well. Cut limes in half and squeeze juice in salsa mixture, mix well. Serve with chips and enjoy. Salsa is better if made a day ahead, but I usually can't wait that long. Enjoy the fresh flavor!
