Feezer Pleaser II

Ok, here are the recipies that go with last weeks freezer meatballs that I posted on the The Grocery Cart Challenge. I hope you enjoy using these with your meatballs.

1. Meatball Sandwiches
Meatballs-you choose the amount for what you need
1 c. Ketchup
3/4 c. brown sugar
1/4-1/2 c. onion (I use 1 t. dried onions)
1/4 t. garlic powder
1/8 t. liquid smoke
Sandwich rolls-again you choose the amount you need.

Place meatballs in 1qt baking dish. Combine the next five ingredients and pour over meatballs. Cover and bake at 350 for 1 hour. Serve on rolls.

2. Sweet & Sour Meatballs
1 20oz. can pineapple chunks
1/3 c. water
3 T. vinegar
1 T. soy sauce
1/2 c. brown sugar
3 T. cornstarch
1 green pepper, cut into 1 in. pieces. (you can use which ever kind of pepper your family prefers)
Hot cooked rice

Drain pineapple, reserving juice. Set pineapple aside. Add water to juice if needed to measure 1 c.; pour into a large skillet. Add 1/3 c. water, vinegar, soy sauce, brown sugar and cornstarch; stir until smooth. Cook until thick. Add pineapple chunks, meatballs, and peppers. Simmer for 20 minutes. Serve over rice.

I am so doing the meatball sandwiches! My friend makes meatball subs like that and puts velvita cheese on top! OH MY GOODNESS they are to die for! Not really grocery cart friendly but...
