PW

PW...what is PW you ask? Well, unless you live under a rock PW is the Pioneer Woman. The most famous woman in blog land. She is a very funny, witty, and down right silly city girl living on a ranch in the middle of nowhere Oklahoma with her punks and Marlboro Man.

My Sister-in-Law(best one in the land) Randy was so awesome to get me her newly published cookbook. Let me tell you this one once cookbook that will have stains in it because you will be using it a lot. The food is so good, even cowboys love it!

Isn't Randy the best! She has gotten my name twice in our family draw and always gets me the most awesome gifts. She made me this super cute cookie mix with my favorite bandanna material. There was also a box of Dove peppermint bark, but as you can imagine I snorked it down already. She even got me a pack of Twilight trading cards. Those are at the frame shop being put into a frame to have a prominent spot in my home. (just kidding, I think my kids took off with them). Anywhoo, just wanted you all to know that I am one lucky sister-in-law. If they ever get divorced I am keeping her and dumping my brother! Dustin, make sure than never happens. Wink, Wink.

So onto the recipe. I used my new giant muffin tin for these yummy little puppies, and they turned out wonderful! I had to adjust the baking time for a little longer, but they worked great.

French Breakfast Puffs
3 c. flour
3 t. baking powder
1 t. salt
1/2 t. nutmeg
1 c. sugar
2/3 c. shortening
2 eggs
1 c. milk
Coating:
2 cubes butter, melted
1 1/2 c. sugar
3 t. cinnamon
Mix first three ingredients in a separate bowl and set aside. In a mixer cream sugar and shortening. Add the eggs and mix again. Alternate adding the flour and milk, beating well after each addition. Fill muffin cups 2/3 full. Bake at 350 for 20 to 25 minutes (30-35 for giant muffing pan). In separate containers melt butter, and combing sugar and cinnamon. Dip warm muffins in butter, thoroughly coating. Then roll in sugar mixture and enjoy! These can be frozen when cooled to room temperature!

Just look at that golden confection of yumminess! Don't you just want to take a bite! I really wish Blogger would come up with some sort of scratch and sniff widget, because my house smelled wonderful ALL day long! Now go make some, you know you want to! Enjoy and let me know how you like them!
