Summer Freezer Jam

Well it happened! My family couldn't believe it was true. They thought the world just might come to an end. What could make such a stir you ask? We ran out of jam!!!!!! Oh no, not that!!!! Anything but that!!!! I think the last time I purchased store jam was in 1994. I have been making freezer jam ever since I found out it only takes 1/2 hour to make. Yes, it is true! 30 minutes and you have wonderful, ooey, gooey, taste great on anything, jam.
Addison and I donned our aprons and set to work. I had strawberries in the freezer that I thawed out. I then followed the directions on the pectin box and less than 30 minutes later I had two batches of freezer jam. I store mine in the Ziploc containers and put them in the fridge. Landon loved the mushy strawberries, and kept eating our jam making product. We finally had to cut him off.

I ended up having more berries than pectin, so I had to get creative so the berries didn't go to waist. So I added a little sugar and poured them into ice cube trays and froze them for smoothies. We are big time smoothie drinkers and this was perfect.

I also dusted off my handy dandy dehydrator and made strawberry fruit leather. It was so yummy. My kids didn't like it because it did not come out of a package, so I got it all to myself. I love it when things work out for mommy!

Believe it or not I have never had freezer jam before! And I can't believe I haven't made my own jam yet. :) Yours looks yummy. Oh! And I found a recipe to make fruit leather in the oven. If I can only remember where that recipe is.

About Dixie...you may be correct. :) I am going to keep her at their farm and ride her every weekend until I decide to take her. The couple is in no hurry and wants her to a good home. I will tell you that story another time. They are the sweetest and we have become wonderful friends. Dixie isn't ridden enough because she can't ride anymore mainly because of her hip problems. She's 12 and needs the attention...so here I am and there she is...and hopefully it will all work out perfect. She's a sweetheart and we have definitel connected. We put a saddle on her Friday and I hopped on and she glided! I felt like I was riding on clouds! :)
